Baked Zucchini Kofta

Ingredients

  • 4 large zucchinis grated
  • 1 cup beer batter (I use Mamma Mia)
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • ½ teaspoon grated ginger
  • 1 cup Italian bread crumbs
  • 1 teaspoon fresh dill minced
  • Oil spray (do not use olive oil)
  • ½ cup feta cheese
  • Salt to taste

Directions

  • Add ½ salt to the grated zucchinis and let it sit for 1 hour. Tilt the pan so that the water will separate from the zucchinis.
  • Squeeze all the water and put it in a mixing bowl.
  • Add beer batter powder, bread crumbs, garam masala, cumin powder, ginger and dill. Add feta cheese.
  • Add salt to taste
  • Mix well, add a little water if necessary.
  • Heat oven to 400 degrees Fahrenheit.
  • Make 1-inch balls.
  • Line them on a baking pan and spray with a little oil.
  • Bake 20 minutes or until golden brown.
