Ingredients

Dough

  • 1.5 tablespoon sugar
  • ½ cup of warm water
  • ¾ teaspoon dried yeast
  • 1 cup all purpose flour
  • 1 tablespoon oil

Filling

  • 1 tablespoon vegetable oil
  • 2 cloves garlic finely minced
  • ½ inch grated ginger
  • 1 bunch shallots finely chopped
  • ½ cup fava beans
  • ½ cup green beans chopped small

Directions

Prepare dough

  • Dissolve the sugar and water together and add the yeast. Leave for 8 – 10 minutes until frothy.
  • Shift the flour into a bowl, add the yeast mixture and stir in the oil.
  • Mix all ingredients together and knead the dough for 10 minutes until smooth and elastic.
  • Keep the dough in an oiled bowl, cover with a damp towel and leave it to rise for 3 hours.

Make the filling

  • Heat oil in a pan and stir fry all the ingredients for the filling together for 15 minutes until cooked.

Make the Kolcatte/Bao

  • Knead the risen dough until smooth.
  • Roll the dough in a circular form and divide into 6 balls.
  • Roll each ball flat about ¼ inch thick.
  • Place filling into the center of each of the rolled ball.
  • Gather up the sides one fold at a time like an accordion.
  • Steam the finished product for 15 minutes or until opaque.
  • Serve with hot mint chutney.
