Maddur Vade

Ingredients

  • 3 cups of rice flour
  • 1 cup all-purpose flour
  • 6 onions minced
  • 1 bunch cilantro minced
  • 2 tablespoon chili powder
  • 3/4 stick butter
  • ½ teaspoon asafetida
  • ¾ cups of water
  • 3 cups of oil for deep frying

Directions

Prepare dough

  • Combine all the dry ingredients in a mixing bowl.
  • Add water little bit at a time, mixing the ingredients to form a thick dough.
  • The dough should be able to form a ball.
  • Grease a sandwich bag.

Deep-fry

  • Grease a sandwich bag.
  • Take a pinch of dough – about ¾ size of a lemon.
  • Pat it on the greased sandwich bag – ¼ inch thick.
  • Heat oil in a frying pan.
  • Slid 3 to 4 wada’s in the frying pan.
  • Fry until wada is golden brown.
  • Let drain on a paper towel.
  • When cool keep in a tight container.
