Mixed Vegetable Pakoras

Ingredients

  • 1 medium tender Carrot – julienned
  • 1 large green Capsicum – julienned
  • 1 large Red Pepper – julienned
  • 1 medium Onion – sliced
  • 1 medium zucchini – julienned
  • ½ cup besan
  • ½ cup rice flour
  • ¼ teaspoon ajwain powder
  • 1 teaspoon red chili powder
  • ¼ cup of water
  • 2 cups oil to fry
  • 4 tablespoon of coriander leaves

Directions

  • Wash the vegetables and cut into 1 inch slices.
  • Mix vegetables, besan, rice flour, ajwain powder and red chili powder.
  • Set aside for 10 minutes.
  • Add water to make it a thick consistency.
  • Heat oil and fry small portions of the dough at a time until golden brown.
  • Garnish with coriander leaves.
