Quinoa and moong sprout salad

Ingredients

Quinoa – 1 cup

Green Moong sprouts  – ¼ cup

Cherry tomatoes abut 12 – cut into halves

  • Olive oil – 1 tbsp
  • Salt – ½ tsp
  • Black ground pepper – ½ tsp
  • Lime juice – 1 tsp
  • Mixed Nuts Roasted (optional)
  • Cilantro – chopped

Directions

  • Wash Quinoa and boil in water till soft
  • Drain Quinoa keep it aside and let it cool
  • Add Moong sprouts to Quinoa
  • Add olive oil, salt, black pepper powder, lime juice and mix well
  • Arrange in a plate / bowl and top it with cherry tomatoes halves
  • Garnish with roasted nuts
