Spinach Pot Pie

Ingredients

  • 1 package puff pastry shells
  • 1 (10 ounce) frozen cut spinach
  • 1 tablespoon vegetable oil
  • 1 medium onion chopped
  • 1 package taco seasoning mix (I use Old El Paso)
  • 7 oz of pizza sauce
  • 2 tablespoons jalapeno nacho slices
  • 1 cup shredded taco cheese
  • 1 cup shredded cheddar cheese
  • Salt to taste

Directions

  • Prepare the puff pastry according to the directions on the package.
  • In a sauce pan add oil and onion. Sauté until the onion is translucent.
  • Add frozen spinach and let it cook for 10 minutes. Add both the cheese packages, jalapeno nacho slices to the spinach.
  • Add the pizza sauce and salt. Keep stirring until it mixes well and it is not watery anymore.  Let it cool.
  • Spoon the mixture into the baked puff pastries. Makes about 6.
  • Serve hot.
