Stuffed Mushrooms

Ingredients

  • 24 large mushrooms, washed, dried with paper towel and stems removed 
  • 3 tablespoons oil  
  • ¼ cup finely chopped scallions or green onions 
  • ½ onion, minced 
  • 3 large cloves garlic, minced  
  • ¼ cup corn (I used frozen) 
  • 1/4 cup Panko breadcrumbs 
  • 4 small sweet potatoes, cooked, cubed 
  • ¾ cup freshly grated Parmesan cheese (optional) 
  • 1 package McCormick buffalo wing 
  • ½ teaspoon chili powder (optional) 
  • Salt to taste 

Directions

  • Chop the stem of the mushrooms and keep it aside. 
  • In a saucepan, heat oil, add onion, garlic and salt, let it brown. 
  • Add the scallions, chopped mushrooms and sauté. 
  • Add cooked, cubed sweet potatoes, breadcrumbs, buffalo wing spice and mix it well.  Add chili powder (optional) 
  • Stuff the mushrooms with this mixture.  Arrange the mushrooms on a baking sheet in a single layer, spray oil. 
  • Sprinkle cheese and bake at 375 degrees for 20 minutes, until stuffing is browned and crusty.
