Sweet Potato/Cauliflower Rice Fritters (Vegan)

Ingredients

  • 2 cups grated sweet potato
  • 1/3 cup cut onions
  • 1 tsp oil
  • 2 green chilies
  • 1/2 cup cauliflower rice
  • 1 egg substitute
  • 1 cup almond flour
  • 2 cups greens
  • 1 tbsp grated ginger
  • 1 clove garlic
  • 1 tsp chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste

Directions

  • Heat a tsp of oil and add cumin seeds and roast till the seeds release a fragrant aroma, in less than a minute.
  • Saute the minced garlic, ginger, green chilies & onions till the onions are translucent.
  • Add the grated sweet potato and cook for around 4-6 minutes to ensure that the sweet potato is partially cooked.
  • Add the cauliflower rice, finely cut spinach and all the spices and mix well & cook together for a few minutes.
  • Switch off the flame, place in a bowl and cool to room temperature, and keep in the refrigerator for an hour or so.
  • Preheat oven to 400F
  • Take the bowl from the refrigerator, add the almond flour, the egg substitute and mix well.
  • Shape into small round patties and place on a wax paper-lined baking tray.
  • Bake at 400 for 12 mins each on both sides with a spray of avocado oil.
  • Serve it with a cool avocado cream dip.
