Vegetable Mixed Cutlets

Ingredients

  • 1 Zucchini
  • ¼ cup cut green beans
  • ¼ cup cut carrots
  • ¼ cup peas
  • 1 red pepper
  • ¼ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon fresh grated ginger
  • 2 teaspoon garlic paste/4 cloves mashed
  • 1 large onion minced
  • ½ bunch of cilantro – chopped
  • Oil
  • 1 cup bread crumbs & cornflour

Directions

  • Heat 4 teaspoons of oil over medium heat.
  • Add 1 large minced onion and fry until it turns brown.
  • Add all the vegetables and roast until cooked.
  • Mix all the dry spices; turmeric, coriander, chili, and cumin powders.
  • Add garlic and ginger paste.
  • Cook for 2 minute.
  • Add cilantro.
  • Let it cool for 20 minutes.
  • Smash the cooked vegetables.
  • Make into small 1/8” thick patties.
  • Roll each patty into the corn and bread crumb mixture.
  • Spray vegetable oil on a baking sheet and place completed patties on the sheet.
  • Bake patties at 400 degrees for 15 minutes and turn over the patty and bake for another 15 minutes or until golden brown.
  • Serve with any chutney or ketchup.
