Vegetarian Indian chilli ( Pav Bhaji) in Instant Pot

Ingredients

  • 1 cup cut onions
  • 1 can diced tomatoes
  • 1 clove garlic minced
  • 1 medium green pepper finely diced
  • ½ cup finely diced carrots
  • 1 cup cauliflower cut into small florets
  • ¼ cup frozen peas
  • 1 potato finely diced
  • ¼ tsp turmeric
  • 2 tbsp pav bhaji masala
  • 1 tsp kashmir chilli powder
  • 2 tbsp oil
  • 2 tbsp butter
  • Cut cilantro for garnish
  • ¼ cup finely diced onions for topping
  • 2 green chillies for spice (optional)
  • ½ Lime cut into wedges for extra tanginess
  • 12 Slider buns/Pav buns,hamburger buns
  • Butter spread

Directions

  • Using the saute mode, saute onions & garlic in 1tbsp oil and 1 tbsp butter till they become translucent.
  • Add the tomatoes and saute for a minute and add the turmeric and pav bhaji masala and saute for 1-3 minutes.
  • Then grind the tomato onion mixture into a fine paste with ¼ cup water in a blender.
  • Return to saute mode and saute the paste in 1 tbsp butter for a minute or so.
  • Add the cut vegetables and 1 cup of water.
  • Cook on high pressure for 8 minutes and allow the steam to release naturally.
  • Open the instant pot and use a masher to mash up the vegetables a bit more.
  • Garnish with cut cilantro.
  • Add a little butter spread on the sides of the buns and pan toast them to a golden brown.
  • Serve hot with the Bhaji or Chilli.
  • Add the chopped onions and squeeze some lime on the bhaji and enjoy.
