Zucchini Corn Fritters

Ingredients

  • 3 medium potatoes, boiled and mashed
  • 1 cup roasted corn
  • 1 cup carrots, grated
  • 1 zucchini, grated
  • 2 tablespoons flour
  • 2 green chilies, minced
  • 1 teaspoon red chili powder (optional)
  • ¼ cup bread crumbs
  • ¼ cup cilantro
  • Salt to taste

Directions

  • Boil and mash the potatoes.
  • In a mixing bowl, combine potatoes, carrots, corn, zucchini, flour, green chilies, red chili, salt and cilantro.
  • Don’t use water since the zucchini has water and it will be enough to combine and make a thick dough.
  • Make small patties, approximately 16 depending on the size of the ball.
  • Coat both sides of the patties with the bread crumbs.
  • Heat a griddle, but two tablespoons of oil, place the patties few at a time on the griddle.
  • Let it cook on low heat, flip so that the other side is also done.
  • Keep flipping until it is golden brown.
  • Serve with chutney.
