Beetroot Thoran (curry)

Ingredients

  • 3 beetroot cubed
  • 1 onion minced
  • 3 cloves of garlic crushed
  • ¼ teaspoon mustard seeds
  • 6 curry leaves roasted and crushed
  • 2 tablespoons avocado oil
  • ¼ teaspoon turmeric
  • 1 teaspoon cumin powder
  • ½ cup thin slices of copra (roasted and pieced)
  • ½ teaspoon red chili powder
  • 2 teaspoons cut cilantro for garnish

Directions

  • Cook the cubed beetroot in Insta pot or pressure cooker.
  • In a pan add avocado oil and mustard seeds, let it splutter.
  • Optional, add onion and garlic, roast until the onion is translucent.
  • Add cooked beetroot, cumin powder, turmeric and chili powder.
  • Mix well and cook for 5 minutes.
  • Add roasted coconut and cilantro as garnish.
