Ingredients

  • 2 cups Rice flour
  • 3 medium onions, minced 1 cup of mixed vegetables – green beans, carrot, peas
  • 6 green chilies, minced
  • 1 bunch chopped fresh coriander leaves
  • 1 teaspoon Salt or to taste
  • ¾ cup water

Directions

Preparation

Combine Rice Flour, minced onions or cooked vegetables, green chilies, coriander leaves, salt, grated coconut and water in a bowl.

Prepare the Adai

  • Divide the dough into 8 equal parts.
  • Heat cast iron griddle on low heat.
  • Grease the griddle with ½ teaspoon of oil.
  • Take a ball of dough and spread it evenly and as thinly as possible.
  • You can grease your fingers with oil to make spreading easier.
  • Make 1 hole in the center of the roti as it will help in cooking it well.
  • Cook until crisp.
