Akki Roti
Ingredients
- 2 cups Rice flour
- 3 medium onions, minced 1 cup of mixed vegetables – green beans, carrot, peas
- 6 green chilies, minced
- 1 bunch chopped fresh coriander leaves
- 1 teaspoon Salt or to taste
- ¾ cup water
Directions
Preparation
Combine Rice Flour, minced onions or cooked vegetables, green chilies, coriander leaves, salt, grated coconut and water in a bowl.
Prepare the Adai
- Divide the dough into 8 equal parts.
- Heat cast iron griddle on low heat.
- Grease the griddle with ½ teaspoon of oil.
- Take a ball of dough and spread it evenly and as thinly as possible.
- You can grease your fingers with oil to make spreading easier.
- Make 1 hole in the center of the roti as it will help in cooking it well.
- Cook until crisp.
