Almond Flour Pancakes

Ingredients

  • ½ cup almond flour
  • ¼ cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • ½ tsp cinnamon
  • ½ -¾ cup oat milk/almond milk
  • 1 mashed banana
  • 1 cup blueberries*
  • 1 cup cut mangoes*
  • 1 tbsp butter
  • A pinch of salt

Directions

  • Take a bowl and add the almond flour and the all purpose flour.
  • Add the baking powder and cinnamon powder.
  • Next mash a ripe banana into a smooth pulp.
  • Add the banana pulp, vanilla essence and milk to the bowl and mix well.
  • The batter should be thick and smooth.
  • Heat a pan or griddle and on medium heat, make a pancake and cook for a minute and then flip to cook the other side.
  • THe pancakes are then served on a plate with a dollop of butter and fresh fruit like mangoes and blueberries.
  • Agave/maple syrup can be drizzled over the pancakes and enjoy.
