Aloo Gobi

Ingredients

  • 2 cups cauliflower cut into small pieces (gobi)
  • ¾ cup cubed potatoes
  • 1 onion minced
  • 1” ginger grated
  • 10 cherry tomatoes
  • 4 tablespoons oil
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • 1 teaspoon cumin seeds
  • ¼ teaspoon methi powder
  • 1 teaspoon chili powder
  • ¼ teaspoon turmeric powder
  • Coriander leaf chopped for garnish
  • Salt to taste

Directions

  • Heat oil in a nonstick pan, add cumin seeds and let it splutter.
  • Roast onion in the pan and fry until it is almost golden brown.
  • Add cubed potatoes and let it roast until it is half cooked.
  • Add cauliflower, cherry tomatoes, ginger and salt, keep stirring until the potatoes and cauliflower is almost done.
  • Add coriander, cumin, methi, chili and turmeric powder.
  • Keep stirring for five minutes and cover the pan, garnish with coriander leaf.
