Appam Triangles/Pancakes Baked

Ingredients

  • 1 cup raw rice 
  • 1 cup jaggery, powdered 
  • ¼ cup coconut milk or buttermilk 
  • 6 tablespoons of aquafaba 
  • 4 tablespoons coconut, grated 
  • 2 bananas, mashed 
  • ¼ teaspoon cardamom powder 

Directions

  • Rinse the rice and soak in water for an hour. Drain the water. 
  • Grind the rice with butter milk and aquafaba.  Do not add water. 
  • Add grated coconut, banana and cardamom powder and grind it until smooth. 
  • Pour the mixture in a bowl and add jaggery powder and mix well. 
  • Grease and heat the sandwich griddle or a pan, pour tablespoons of the batter on to the heated sandwich griddle or a pan. 
  • Let the appam cook until it turns golden brown. 
  • Repeat the above steps for the rest of the flour.
