Avocado Toast

Ingredients

  • 4 slices whole grain bread
  • 4-6 slices of any favored cheese
  • 2 small tomatoes or 1 large
  • 2 tbsp Sriracha
  • 2 Avocados
  • 1 cup arugula/other greens
  • 2 tbsp lime juice
  • ¼ cup finely diced red onions
  • Salt & Pepper for taste
  • 2 tbsp pomegranate(optional)
  • Jalapeno slices for spice(optional)

Directions

  • Toast the bread slices
  • Place the cheese on the toasted bread slices and heat in a toaster oven to allow the cheese to melt
  • Cut the tomatoes, onions and the avocados and keep ready
  • After the cheese has melted, add the cut avocados and cover the entire slice.
  • Next add the cut tomatoes and onions and pack it on the avocados
  • Then add the arugula leaves
  • Season well with salt, pepper & a drizzle of lime juice
  • Top with a few drops of sriracha for spice and some pomegranate seeds for crunch
