Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup sour cream
  • 1 stick butter, melted
  • 1 cup granulated sugar
  • 3 tablespoons aquafaba + 3 teaspoons
  • 1 tablespoon flax seed meal (use per package)
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas, mashed
  • ½ cup blueberries
  • ½ cup pecans

Directions

  • Preheat oven to 350 F. Grease a loaf pan with cooking spray.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In another large bowl, mix together melted butter, sugar, aquafaba, flax seed meal, sour cream, and vanilla.
  • Add mashed bananas and stir until combined. Gradually add dry ingredients to wet ingredients until just combined.
  • Fold in blueberries and pecans.
  • Pour into the loaf pan.
  • Bake until a toothpick comes out clean, about 1 hour. Let cool 20 minutes in pan, then turn out onto a cooling rack to cool completely.
