Beet Salad

Ingredients

  • 2 medium red beets
  • 2 medium golden beets
  • ½ cup red onion
  • 8-10 fresh mint leaves
  • 2 tbsp feta cheese
  • 2 tbsp pistachios

Directions

  • Wash and clean the beets thoroughly and cut off the tops and the bottom.
  • Pressure cook the beets with skin in the pressure cooker for 2-3 whistles.
  • Once cooled, remove the skin which will come off easily and slice the beets and cut them into thichthick matchsticks.
  • Slice the red onions into thin slices.
  • Toss the beets & the onions together with a little salt & pepper.
  • Garnish with the finely cut fresh mint and top with feta cheese and pistachios for crunch.
  • An orange lime dressing pairs well with this salad.
