Bhindi
Ingredients
- 2 pounds Okra, cut into small pieces
- 1 sweet potato
- 3 tablespoons fresh tamarind paste
- ½ teaspoon turmeric paste
- ½ teaspoon brown sugar
- ½ cup fresh grated coconut
- 2 teaspoon hot red chili powder
- 1/8 teaspoon powdered fenugreek
- ¼ cup oil
- ½ bunch of cilantro to garnish
- ½ teaspoon mustard seeds
- Pinch of asafoetida
Directions
Prepare Masala:
Grind coconut, fenugreek, red chili powder, turmeric and tamarind paste with water.
Prepare the Okra
- Cook Okra in the oven at 350 degrees for 10 minutes so that the water is removed.
- Simultaneously heat a pan on medium heat.
- Add oil mustard seed & asafetida. Let mustard seeds split.
- Add sweet potato and let it brown.
- Add cooked okra and let cook for another 2 minutes.
- Add the ground masala to the pan and let it cook for 5 minutes.
- Add water if necessary to make it liquid.
- Garnish with cilantro leaves.
