Braised Okra

Ingredients

  • 2 lbs. fresh okra, whole
  • 2 red bell pepper
  • ½ cup vinegar
  • 1 large onion, minced
  • 4 cloves garlic, minced
  • ½ cup olive oil
  • 2 cups tomatoes, chopped
  • ½ teaspoon sugar
  • 1 teaspoon chili powder
  • 2 teaspoons cilantro
  • Salt to taste

Directions

  • Wash okra and wipe it dry. Do not remove the tops.
  • Immerse the okra in bowl with vinegar for 30 minutes. This prevents okra from splitting during cooking.
  • Drain, rinse well and dry the okra.
  • Heat oil in a saucepan and roast onion and garlic until transparent.
  • Add okra and red pepper, roast for five minutes.
  • Add tomatoes, sugar, chili powder and salt.
  • Simmer for 30 minutes on low flame until done.
  • Garnish with cilantro.
