Bread Upma
Ingredients
- 3 tbsp oil
- ½ tsp mustard seeds
- ½ tsp urad dal
- 1 tsp chana dal
- 3 tbsp peanuts (optional if allergic)*
- 2 red chillies
- ½ tsp asafoetida
- ½ tsp turmeric
- ¼ tsp chilly powder
- 1 tsp salt
- 10-12 slices of bread
- 1 medium onion
- 1 medium tomato
- ½ grated carrot
- 2 tbsp yogurt
- Few curry leaves
- ½ cup peas
- ½ cup potato hash(optional)
Directions
- Chop up the bread slices into fine small squares and keep in a bowl
- Add salt to the yogurt and mix and add the same to the cut bread and mix so the yogurt is absorbed by the bread. Allow to sit for a few minutes
- In the meanwhile, heat the oil in a pan
- Add the mustard seeds and allow them to crackle
- Next add the urad dal & chana dal and roast to golden brown for 15 secs or so
- Then add the red chillies and curry leaves for 10 secs
- Peanuts can be roasted for 1 minute in a microwave and then added to the oil
- Now add the finely diced onions and saute till they are translucent
- Next add the finely cut tomatoes and saute for a min or so till the tomatoes are soft
- Add the peas and the asafoetida, turmeric & chilly powder
- Stir the mixture for a minute or so and then add the bread
- Grated carrots can be added at this time
- Mix it well and cook on a medium flame till the whole mixture comes together cohesively for 3-5 minutes and stir often to prevent the bread from burning
- Extra oil can be added to crisp the bread if needed
- Cashew nuts can be added instead of peanuts
