Bread Upma

Ingredients

  • 3 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp urad dal
  • 1 tsp chana dal
  • 3 tbsp peanuts (optional if allergic)*
  • 2 red chillies
  • ½ tsp asafoetida
  • ½ tsp turmeric
  • ¼ tsp chilly powder
  • 1 tsp salt
  • 10-12 slices of bread
  • 1 medium onion
  • 1 medium tomato
  • ½ grated carrot
  • 2 tbsp yogurt
  • Few curry leaves
  • ½ cup peas
  • ½ cup potato hash(optional)

 

Directions

  • Chop up the bread slices into fine small squares and keep in a bowl
  • Add salt to the yogurt and mix and add the same to the cut bread and mix so the yogurt is absorbed by the bread. Allow to sit for a few minutes
  • In the meanwhile, heat the oil in a pan
  • Add the mustard seeds and allow them to crackle
  • Next add the urad dal & chana dal and roast to golden brown for 15 secs or so
  • Then add the red chillies and curry leaves for 10 secs
  • Peanuts can be roasted for 1 minute in a microwave and then added to the oil
  • Now add the finely diced onions and saute till they are translucent
  • Next add the finely cut tomatoes and saute for a min or so till the tomatoes are soft
  • Add the peas and the asafoetida, turmeric & chilly powder
  • Stir the mixture for a minute or so and then add the bread
  • Grated carrots can be added at this time
  • Mix it well and cook on a medium flame till the whole mixture comes together cohesively for 3-5 minutes and stir often to prevent the bread from burning
  • Extra oil can be added to crisp the bread if needed

 

  • Cashew nuts can be added instead of peanuts
