Cauliflower Fenugreek

Ingredients

  • 1 pound cauliflower flowerlets or head of cauliflower 
  • 2 bunch of fresh fenugreek leaves, washed and chopped 
  • ½ cup peas 
  • 1 teaspoon cumin seeds 
  • 1 medium onion, minced 
  • 4 garlic cloves, minced 
  • 1 teaspoon fresh ginger, minced 
  • 8 cherry tomatoes 
  • 1 tablespoon curry powder (homemade) 
  • 6 tablespoons oil  

Directions

  • In a saucepan, heat oil, put the cum seeds.  Let it splutter then add onion and garlic.  Let it cook until golden brown. 
  • Add cauliflower, keep stirring until the flowers are half done. 
  • Add fenugreek leaves, peas, ginger, tomatoes and mix it well.  Cover the sauce pan and let it cook until the vegetables are done, but yet crisp. 
  • Sprinkle curry powder and mix it well.  Let it cook for 5 minutes.  
  • Serve it hot.
