Cauliflower in Chimichurri Sauce

Ingredients

  • 1 cupfresh flat-leaf parsley, tightly packed
  • 1 cupfresh cilantro, tightly packed
  • ¾ cupdiced red onion
  • 3 tablespoons fresh oregano
  • 8 cloves of garlic, peeled
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • ¼ teaspoonfreshly-ground black pepper
  • ½ teaspoonred pepper flakes
  • Salt to taste
  • ½ cup olive oil
  • 1 head of cauliflower chopped in strips

Directions

  • Pulse all sauce ingredients, except oil, in a blender until mined, almost pureed.
  • Slowly add the olive oil, while pulsing the mixture, until the oil is combined.
  • Simultaneously, heat the oven at 400 degree F, place the cut cauliflower on a baking sheet.
  • Bake for 20 minutes or until brown.
  • Brush the sauce over the cauliflower, serve hot.
