Chapati masala noodles
Ingredients
- 6-8 chapatis
- ½ cup tomatoes
- 1 medium onion
- 1 tbsp ginger
- 2 green chillies
- 1 tsp red chilli powder
- ½ tsp turmeric powder
- ½ tsp asafetida
- 2 tbsp oil
- 1 tsp urad dal
- ½ tsp mustard seeds
- ½ cup edamame/peas
- Salt to taste
Directions
- Cut the chapatis lengthwise into strips to resemble noodles
- Cut the strips into the the width according to taste
- Finely cut the onions, grate the ginger and slit the green chillies into two
- Heat the oil in a pan and add the mustard seeds and allow them to crackle
- Add the urad dal, green chillies and roast for 10 secs or so
- Next add the asafetida and the ginger
- Add the onions soon after and saute till they are translucent
- Next add the cut tomatoes and saute till they are all soft
- Add the turmeric, chilli powder and salt to taste
- When the masala mixture is cooked in 2-4 minutes, add the chapati noodles and switch off the flame and mix well till the masala paste coats all the noodles
- A drizzle of ketchup or sriracha can be added according to taste
