Chickpea Salad

Ingredients

  • I red onion finely diced 
  • 1 tomato 
  • 1 cup canned chickpeas washed and drained 
  • 1 cup greens finely cut ( I used spinach) 
  • ⅓ cup cranberries 
  • 3 tbsp  feta cheese  
  • ⅓ cup cucumber 
  • ¼ cup  lemon juice 
  • 1 tsp crushed garlic 
  • 1 tsp agave/honey 
  • 1/4 tsp  salt 
  • Fresh ground pepper 
  • ⅓ cup olive oil 
  • 1 tsp pepper flakes 

Directions

  • Finely cut all the vegetables and whisk together the lemon juice, honey,crushed garlic,olive oil, salt & pepper to form an emulsion 
  • Pour the dressing on the salad and toss the salad and enjoy
