Colored Peppers & Avocado Salad

Ingredients

  • ¼ yellow pepper
  • ¼ red pepper
  • ¼ orange pepper
  • ¼ green pepper
  • 1 avocado
  • 2 tbsp olive oil
  • 1 clove garlic
  • ½ tsp red chilly flakes
  • 1 tbsp chopped cilantro
  • 1 firm tomato chopped(optional)
  • Juice of 1 lime
  • Salt & pepper to taste

Directions

  • Julienne cut the peppers into a thin matchstick shape.
  • Cut the avocado into thin slices
  • Heat the oil in a pan and add the minced garlic. Saute till it turns fragrant.
  • Add the red chilly flakes & the cut peppers. Saute for 4-6 minutes until they are gently softened.
  • Season with salt & pepper
  • Use a plate to lay the peppers.
  • Add the cut avocado slices and the diced tomato.
  • Sprinkle the cut cilantro and squeeze the lime according to taste.
