Colorful Fruit & Vegetable Salad

Ingredients

  • ¼ diced red peppers
  • ¼ cup grated carrots
  • ¼ cup green mango
  • ½ cup spinach
  • ¼ cup cut green grapes
  • ¼ cup pomegranate
  • ¼ cup oranges
  • ¼ cup dried cranberries
  • ¼ cup cut almonds
  • ½ slab of super firm tofu
  • 1tbsp soy sauce
  • OIl spray
  • 2 tbsp cornstarch
  • ⅓ cup ground & strained raspberries
  • 1 tbsp agave/honey
  • 1 tsp Sriracha
  • 2 tbsp oil or water
  • Salt & pepper

Directions

  • Preheat the toaster oven or oven to 425 F
  • Dry the diced firm tofu with paper towels and then toss them in a bowl with soy sauce & cornstarch.
  • Place the coated tofu on the baking tray and then spray with the oil spray to coat the tofu squares
  • Bake at 425 F for about 30 mins, with an in between blending
  • Finely dice all the vegetables
  • Finely cut the spinach and grate the carrots
  • Cut the fruits also finely
  • Make the raspberry dressing by combining the strained raspberry juice, agave/honey,
  • Sriracha, water/oil and salt & pepper according to taste
  • Drizzle over the salad , mix and enjoy
