Confetti Corn Salad

Ingredients

  • 3 ears of corn
  • ½ cup diced red peppers
  • ⅓ cup cut red onions
  • ¼ cup cut cilantro
  • ¼ cup cut black grapes
  • ½ jalapeno deseeded & diced
  • Juice of half a lime
  • Salt & pepper to taste

Directions

  • Remove the husk and cook the ears of corn in a pressure cooker for 2 whistles.
  • When the corn is being cooked, dice the red pepper, onion, grapes, jalapenos & cilantro.
  • Once the corn is cooked, cut the corn kernels from the cob using a knife. Add the cooked corn kernels to the salad bowl with the other vegetables.
  • Mix them all well together and add salt & pepper.
  • Lastly, add the juice of half a lime and mix it all together.
  • The warm corn salad is ready to enjoy.
