Date Nut Bars

Ingredients

  • 10-12 Mejdool dates
  • 1 ½ cups assorted nuts
  • ¼ cup Goji berries
  • 1 cup dark chocolate chips

Directions

  • The combination of nuts used are pistachios, almonds, cashews & walnuts.
  • Toast each set of nuts separately in the microwave in 30 sec intervals for an average of two minutes or less.
  • Remove the seeds from the soft Mejdool dates and add to a food processor or blender along with the nuts.& Goji berries.
  • Give the blender a few pulses to blend the mixture into a coarse cohesive blend.
  • Flatten the date nut mixture onto a clean teflon baking sheet into a rectangular shape of desired thickness.
  • Melt the chocolate chips on a low flame into smooth & shiny chocolate and spread it on the nut bark.
  • Use the back of a fork to make any desired pattern on the chocolate.
  • Allow to cool in the refrigerator for a couple of hours to set.
  • Cut the bark into bite size pieces and enjoy.
