Dhokla
Ingredients
- 1 cup gram flour
- 1 tablespoon semolina
- ¼ teaspoon turmeric
- 1 tablespoon oil
- 1 tablespoon fresh ginger, paste
- 2 green chilies, paste
- ½ cup water
- 1 teaspoon sugar, optional
- ¾ teaspoon Eno
- 1 tablespoon water to activate Eno
Tempering
- 1 tablespoon oil
- ½ teaspoon mustard seeds
- 1/8 teaspoon hing
- 1 spring curry leaves
Directions
- In a bowl, mix water, turmeric, oil, ginger, chiles, semolina and sugar. Mix well.
- Add gram flour and mix it well so that there are no lumps.
- Prepare pan to pour the dough.
- Prepare steamer – I used idle vessel. Let the water boil.
- As soon as the steam comes, prepare eno (combine ¾ teaspoon with 1 tablespoon of water) stir quickly and pour it into the dough
- Mix well and pour the dough into the pan for steaming Dhokla.
- In a small saucepan, heat oil, put mustard seeds ad hing. As soon as it splutters add curry leaves. Remove from the fire immediately.
- Garnish the dhokla with the tempered preparation.
