Dhokla

Ingredients

  • 1 cup gram flour 
  • 1 tablespoon semolina 
  • ¼ teaspoon turmeric 
  • 1 tablespoon oil 
  • 1 tablespoon fresh ginger, paste 
  • 2 green chilies, paste 
  • ½ cup water 
  • 1 teaspoon sugar, optional 
  • ¾ teaspoon Eno 
  • 1 tablespoon water to activate Eno 

 

Tempering 

  • 1 tablespoon oil 
  • ½ teaspoon mustard seeds 
  • 1/8 teaspoon hing 
  • 1 spring curry leaves 

Directions

  • In a bowl, mix water, turmeric, oil, ginger, chiles, semolina and sugar.  Mix well. 
  • Add gram flour and mix it well so that there are no lumps. 
  • Prepare pan to pour the dough. 
  • Prepare steamer – I used idle vessel. Let the water boil. 
  • As soon as the steam comes, prepare eno (combine ¾ teaspoon with 1 tablespoon of water) stir quickly and pour it into the dough 
  • Mix well and pour the dough into the pan for steaming Dhokla.
  • In a small saucepan, heat oil, put mustard seeds ad hing.  As soon as it splutters add curry leaves.  Remove from the fire immediately. 
  • Garnish the dhokla with the tempered preparation.
