Fig Muffins

Ingredients

  • 1 2/3 cups flour 
  • 1 tablespoon baking powder 
  • ½ teaspoon baking soda 
  • 8 tablespoons sugar 
  • ¼ cup butter, melted 
  • 1 tablespoon orange zest 
  • 1 cup buttermilk 
  • ½ cup ju st egg 
  • ½ cup of fig jam 
  • Frosting (optional)

Directions

  • Preheat oven to 400 F 
  • Sift flour, baking powder, baking soda, sugar and ½ teaspoon salt into a large bowl.   
  • In another bowl, combine melted butter, orange zest, buttermilk and egg. 
  • Add wet ingredients to dry ingredients and mix to combine.   
  • Prepare a muffin pan, add 2 tablespoon batter into the base of each muffin pan.   
  • Add 2 tablespoons fig jam to each, then top with remaining batter. 
  • Bake the muffins for 18-20 minutes or until golden brown.
