Instant Pot Sweet Potato Peanut Soup

Ingredients

  • 2 cups diced sweet potato 
  • ½ a peeled and diced apple 
  • 1 medium carrot 
  • ½ can diced tomatoes 
  • ½ cup peanut butter 
  • 1 tbsp coriander powder 
  • ½ tbsp cumin powder 
  • 1 tsp red chili powder 
  • 2 cloves garlic 
  • 2 tbsp olive oil 
  • 4 shallots chopped 
  • 2 cups vegetable broth 
  • 3 cups water 
  • 1 inch ginger 
  • ½ tsp red chili flakes 
  • ½ tsp black pepper 
  • Salt to taste 

Directions

  • In saute mode, add the oil and when hot add the ginger, garlic, and roast for a minute until fragrant. 
  • Add the shallots and continue to saute for a few more minutes until they are soft and translucent. 
  • Add the red chili flakes at this time. 
  • Next, add the carrots, tomatoes, apple, and sweet potato and saute. 
  • The peanut butter is added next and mixed well with the above. 
  • Add the spices, namely coriander, cumin, chili powder and give it a nice mix. 
  • Add the water and vegetable broth, and season to taste with salt and pepper. 
  • Turn off the saute mode and start the pressure cook mode on high for 5 minutes. 
  • Allow the pressure to release naturally for 5 minutes and force release the pressure after. 
  • Use an immersion blender to regular blender to blend into a smooth puree. 
  • The soup can be garnished with roasted peanuts, black pepper, cilantro, and a dash of lime. 
  • Serve with warm toasted homemade garlic bread.
