Kerala style peanut salad

Ingredients

  • ½ cup roasted peanuts
  • ¼ cup diced red pepper
  • ¼ cup diced raw mango
  • ¼ cup tomatoes
  • 1 stalk diced scallion
  • ½ diced jalapeno for spice(optional)
  • 2 tbsp grated coconut
  • ½ small avocado
  • ¼ sliced red onions
  • Salt and pepper to taste
  • 1 tsp grated ginger
  • 2 tbsp lime juice
  • 1 tsp agave
  • 2 tbsp water/oil
  • Pinch of red chilli flakes
  • Salt to taste

Directions

  • Roast the peanuts in the microwave for 2 minutes, 1 minute at a time
  • Mix all the finely diced and cut veggies.
  • Combine the ginger, lime juice, agave, water & red chilli flakes and mix well
  • Use this dressing on the salad and enjoy
