Khajur Badam Kadubu

Ingredients

  • 2 cups all-purpose flour
  • 1 stick soften butter
  • 1 cup almond
  • 1 cup pitted date
  • ½ cup raisins
  • ½ cup milk
  • ¼ poppy seeds
  • ¾ cup shredded dry coconut
  • 2 cups of oil for frying

Directions

Prepare filling (can make it 1 week in advance)

  • Blend date, almond and poppy seed with milk into a paste.
  • Add raisins, powdered cloves, coconut and brown sugar.
  • Keep the mixture on low heat and stir it leaves the sides of the pan, approximately 45 minutes – it turns reddish brown.
  • Add cardamom powder in the end.

Dough

  • Mix all-purpose flour, salt and butter in a bowl.
  • Make a stiff dough using as little water as possible.
  • Knead well, cover the dough with wet towel for 1 hour.

Making the Kadabu

  • Make small balls about ¼ size of a lemon.
  • Roll each portion into a circle of 5” in diameter.
  • Place 1 tablespoon of the filling in the center and seal the edges using little water.
  • Use a kadabu mold or shape it in your hand.
  • Prepare 5/7 kadabu.
  • Pre-heat oil in a pan and deep fry the dadabu until golden brown.
  • Remove from pan and let it cool before storing in a tight container.
