Khajur Badam Kadubu
Ingredients
- 2 cups all-purpose flour
- 1 stick soften butter
- 1 cup almond
- 1 cup pitted date
- ½ cup raisins
- ½ cup milk
- ¼ poppy seeds
- ¾ cup shredded dry coconut
- 2 cups of oil for frying
Directions
Prepare filling (can make it 1 week in advance)
- Blend date, almond and poppy seed with milk into a paste.
- Add raisins, powdered cloves, coconut and brown sugar.
- Keep the mixture on low heat and stir it leaves the sides of the pan, approximately 45 minutes – it turns reddish brown.
- Add cardamom powder in the end.
Dough
- Mix all-purpose flour, salt and butter in a bowl.
- Make a stiff dough using as little water as possible.
- Knead well, cover the dough with wet towel for 1 hour.
Making the Kadabu
- Make small balls about ¼ size of a lemon.
- Roll each portion into a circle of 5” in diameter.
- Place 1 tablespoon of the filling in the center and seal the edges using little water.
- Use a kadabu mold or shape it in your hand.
- Prepare 5/7 kadabu.
- Pre-heat oil in a pan and deep fry the dadabu until golden brown.
- Remove from pan and let it cool before storing in a tight container.
