Lemon rice

Ingredients

  • Basmati Rice 1 cup
  • 3 tbsp oil
  • ½ tsp mustard seeds
  • 2 tbsp grated coconut
  • 2 tbsp lime juice
  • 1 ½ tbsp Chana dal
  • 1 tsp urad dal
  • 2 green chillies
  • 1 tbsp grated ginger
  • ½ tsp asafetida
  • ½ tsp turmeric
  • 1 tsp salt
  • ¼ cup peanuts/cashew nuts
  • 6-8 curry leaves
  • 2 tbsp cut Cilantro for garnish.

Directions

  • Wash the basmati rice a few times and then pressure cook it in 2 cups of water with a tsp of oil for 1 whistle and switch off the flame.
  • In the meantime, heat the remaining oil in a pan and once hot, add mustard seeds and allow them to crackle.
  • Next add the chana dal and the urad dal and roast to a golden brown.
  • Add the slit green chillies, ginger, asafetida, turmeric and curry leaves.
  • Saute for less than a minute and switch off the flame.
  • The peanuts can be roasted in the microwave for 2 minutes in 1 minute intervals and then added to the mixture.
  • The cooked basmati rice needs to be fluffed up with a fork so the grains can be separately.
  • Add the lime juice and the grated coconut to the mixture and mix well with the cooked basmati rice.
  • Adjust the quantity of lime juice according to taste.
  • Garnish with chopped cilantro.​
