Mango Mousse

Ingredients

  • 2 cups mango puree (canned)
  • 1 cup water
  • 2 tsp Agar Agar powder
  • 1/2 cup refrigerated coconut cream/milk
  • 4 tbsp Agave
  • ¼ cup orange juice
  • Juice of half lime
  • ¼ tsp cardamom
  • 2 tbsp diced apricots
  • 2 tbsp raisins

Directions

  • Take a pan and add the water and bring to a boil.
  • Add the Agar Agar powder and stir and allow to dissolve, 2-3 few minutes.
  • Lower the flame and add the mango puree and agave syrup and allow the mixture to thicken a little.
  • Add the refrigerated cream that separates from the water in the can, orange juice & lime juice and give it a quick stir.
  • Cook for a minute or two and take off the flame.
  • Add the cardamom powder and mix well.
  • Have ramekins or molds ready for the mousse.
  • Add a tsp of diced apricots & raisins to the ramekins and pour the mango mousse mixture.
  • Allow the Mousse to set in the refrigerator for a couple of hours.
  • Diced fresh mango can also be added instead of apricots if desired.
  • Remove from mold & serve chilled and enjoy.
