Mango Rice

Ingredients

  • 1 cup green mango 
  • 3 cups cooked rice/approx 1 cup raw 
  • 2 tbsp oil 
  • 1 tsp mustard seeds 
  • ¼ tsp asafetida 
  • 1 tbsp Chana dal 
  • 1 tsp Urad dal 
  • 6 green chillies 
  • 2-3 broken red chillies 
  • 2 tbsp grated coconut 
  • 6-8 curry leaves 
  • ¼ cup peanuts/cashews 
  • ½ tsp turmeric 
  • Salt to taste 

 

Directions

  • Wash and peel the mango. Finely grate the mango and keep aside. 
  • Heat oil in a pan & add mustard seeds and allow them to crackle. 
  • Add the chana dal & urad dal and roast for less than 30 secs. 
  • Add the peanuts and/or cashews . 
  • Add the slit green chillies and broken red chillies and roast. 
  • Add the asafetida and the curry leaves and stir well. 
  • The finely grated green mango is added next along with salt & turmeric and mixed well together. 
  • Cook on a medium flame for4-6 minutes till the mango is cooked and soft. 
  • Switch off the flame and mix the mango paste nicely. 
  • Add the grated coconut at this time. 
  • Use a day-old cooked regular rice or long grained Basmati rice to mix with the mango masala mixture.  
  • Garnish with fresh cilantro and serve with Raita/spiced yogurt.
