Mango Rice
Ingredients
- 1 cup green mango
- 3 cups cooked rice/approx 1 cup raw
- 2 tbsp oil
- 1 tsp mustard seeds
- ¼ tsp asafetida
- 1 tbsp Chana dal
- 1 tsp Urad dal
- 6 green chillies
- 2-3 broken red chillies
- 2 tbsp grated coconut
- 6-8 curry leaves
- ¼ cup peanuts/cashews
- ½ tsp turmeric
- Salt to taste
Directions
- Wash and peel the mango. Finely grate the mango and keep aside.
- Heat oil in a pan & add mustard seeds and allow them to crackle.
- Add the chana dal & urad dal and roast for less than 30 secs.
- Add the peanuts and/or cashews .
- Add the slit green chillies and broken red chillies and roast.
- Add the asafetida and the curry leaves and stir well.
- The finely grated green mango is added next along with salt & turmeric and mixed well together.
- Cook on a medium flame for4-6 minutes till the mango is cooked and soft.
- Switch off the flame and mix the mango paste nicely.
- Add the grated coconut at this time.
- Use a day-old cooked regular rice or long grained Basmati rice to mix with the mango masala mixture.
- Garnish with fresh cilantro and serve with Raita/spiced yogurt.
