Methi Malai Curry

Ingredients

  • 4 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 green chili, chopped
  • 1 teaspoon ginger, crushed
  • 1 teaspoon black pepper
  • 1 teaspoon poppy seeds
  • 3 green cardamom pods
  • 1 small onion, minced
  • 6 pods of garlic
  • 12 cashews
  • 2 cups coconut milk
  • 2 cups fresh chopped methi leaves
  • 1 cup mutter
  • Salt to taste

Directions

  • Heat oil in a sauce pan, add cumin seeds, after it splits, add green chili, ginger, pepper, poppy seeds, cardamom, onion, garlic and cashews. Sauté for 2 minutes.
  • Let it cool and transfer it to a blender. Add 1 cup of coconut milk and blend it to a smooth paste.  Add the second cup of coconut milk and complete the process.
  • Transfer the whole mixture into the sauce pan and let it boil. Add methi leaves, peas and salt to the sauce.
  • Let it boil for few minutes and shut the heat.
