Ingredients

  • 3 cups mixed vegetables cut (beans, carrots, poblano pepper, turnip)
  • 7 oz pizza sauce (I used Rao’s)
  • 1 small onion chopped
  • 2 tablespoons dry coconut (copra)
  • 1 tablespoon ginger
  • 8 garlic cloves
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • Salt to taste
  • 4 tablespoons oil
  • 1 teaspoon mustard seeds
  • ¼ teaspoon asafetida
  • Cilantro to garnish
  • 1 cup water

Directions

  • In a sauce pan heat the oil and put the mustard seeds and asafetida. Let the seeds splutter.
  • Add mixed vegetables and cook until it is ¾ cooked.
  • Add coriander, cumin, garam masala, chili powder and ginger.
  • Stir for 5 minutes and shut off the flame.
  • In a separate sauce pan sauté onion and garlic in 1 teaspoon oil until translucent.
  • Add the pizza sauce and coconut to it and let it heat for 5 minutes.
  • Transfer this into a blender and make a smooth paste. Or use a hand blender.
  • Add this paste to the cooked vegetables and mix well. Add water and let it boil for 5 minutes.
  • Garnish with cilantro.
