Mixed Vegetable Kootu – Karnataka Style Kootu
Ingredients
- ½ cup door dal
- Pinch of turmeric
- ¼ teaspoon jaggery
- ¾ teaspoon tamarind (adjust according to taste)
- 10 curry leaves roasted
- 2 tablespoons peanuts
- 2 tablespoons cilantro to garnish
- ¼ cup cut green beans
- ¼ cup cut carrots
- 4 small potatoes cut in half
- 2 bell peppers cut
- 2 tablespoons ghee or oil
- Pinch of hinge
- Salt to taste
For Masala:
- 1 Tbsp dhania
- ¼ teaspoon black pepper
- ½ teaspoon jeera
- ¼ teaspoon methi
- 4 dry red chilli
- 1 teaspoon chana dal
- 1 teaspoon urad dal
- ¼ teaspoon cinnamon powder
- ¼ cup grated coconut
Directions
- Wash and cook toor dal with turmeric.
- In a small pan, roast, all masala ingredients except coconut, till aromatic and golden.
- Grind masala with grated coconut into a fine paste.
- Chop the vegetables and roast them for 5-10 minutes till half done.
- Mix vegetables, masala paste and cooked vegetables with the cooked dal.
- Add jaggery, salt and tamarind
- Boil the mixture for 10 minutes on low heat. Keep stirring.
- Roast peanuts and curry leaves in ghee, add hinge
- Garnish the kootu and add cilantro on top.
