Okra Curry

Ingredients

  • 5 cups cut Okra
  • 1 tbsp Urad dal
  • ½ tsp asafetida
  • ½ tsp mustard seeds
  • 3 tbsp oil
  • 1 tsp salt
  • ½ tsp turmeric powder
  • 1 tsp red chilly powder

Directions

  • Preheat oven to 400F
  • Line a baking sheet with aluminum foil and keep ready
  • Heat the oil in a pan and add the mustard seeds and allow to crackle
  • Next add the Urad dal and roast to golden brown for a few secs
  • Add the cut Okra and the turmeric powder, chilly powder, salt and asafetida and mix well.
  • Turn off the flame and transfer the Okra onto a baking tray and completely spread out
  • Bake at 400 for 30-40 min
  • Keep watch to mix and toss the okra in between.
