Oven Roasted Dill Potatoes

Ingredients

  • ⅓ cup fresh Dill leaves
  • 2 tbsp olive oil
  • 3 lbs baby potatoes
  • ½ tsp turmeric
  • ½ tsp chilly powder
  • Salt & pepper to taste

Directions

  • Preheat the oven to 450 F
  • Wash the potatoes well, dry them and cut them into 1” pieces or into two or three
  • Do not worry about removing the skin of the potatoes
  • Place the potatoes in a large mixing bowl
  • Add the olive oil, finely chopped dill leaves, turmeric, chilly powder, salt & pepper according to taste
  • Toss the potatoes and mix them well with the spices and the dill leaves
  • Place them in a baking tray in one layer
  • Bake at 450F for 25-30 minutes
  • Enjoy as a snack or with rice or Chapatis
