Potato Halwa

Ingredients

  • 1 cup potato
  • ¾ cup sugar
  • ½ tsp cardamom powder
  • 3 tbsp ghee
  • 1 tbsp cashews
  • 1 tsp raisins

Directions

  • Cook the potato till very soft and mash into a pulp after removing skin
  • Heat 1 tsp ghee in a pan and add the nicely mashed potatoes and roast on a medium flame till light brown in color for 2-4 minutes
  • Next add the sugar and mix well and saute on a low to medium flame for a few minutes till the sugar melts
  • Add a tbsp of ghee or clarified butter and saute till the mixture thickens in a few minutes
  • When the potato sugar mixture thickens and starts leaving the sides of the pan, switch off the flame
  • Next heat the remaining ghee in a pan and roast the cashews till they are golden brown for 15 secs or so and add the raisins and switch off the flame and add to the halwa
  • Add the cardamom powder and mix well
  • The halwa is ready to enjoy
