Puran Poli
Ingredients
Filling
- 2 cups coconut
- 1 cup jaggery or 1½ cup brown sugar
- ½ teaspoon cardamom powder
- ¼ teaspoon nutmeg powder
- 2 tablespoon ghe
Covering
- 1½ cups all-purpose flour mix with ½ cup whole wheat flour
- ½ teaspoon salt
- Pinch of turmeric powder
- 4 tablespoon ghee
- Water as required to knead the dough

- Grind coconut until smooth, it should be mashed
- Add jaggery, nutmeg powder, 2 tablespoons ghee and cardamom powder
- Keep stirring the mixture until thick or leaves the sides of the pan
- Let it cool
Directions
- Mix all-purpose flour and wheat flour through a sieve.
- Add salt and mix well.
- Add water to knead the dough, should be smooth and tight.
- Rub 1 teaspoon of ghee over it and cover the dough for at least 30 minutes
Making puran poli
- Make small balls of the puran filling and keep it aside.
- Make medium size ball from the dough and roll it 3 inches in diameter, add all-purpose flour to the rolling board.
- Keep one of the puran ball mixtures in the center of the rolled dough.
- Bring the edges together towards the center, join all the edges and pinch them.
- Sprinkle with flour and roll the stuffed dough. Or wet edges of your finger with oil and start to tap it until it is 5 inches in diameter.
- On a heated griddle, place the rolled poli and bake until it is cooked.
- Turn the poli over and cook the 2nd
- After it is removed from the griddle, spread a little ghee on it.
- They should be golden brown in color.
Make rest of the dough and poli mix in the same manner until all the dough and poli is complete.
