Quinoa & Green Moong Sprouts Salad.

Ingredients

  • 1 cup quinoa
  • ¼ cup green moong sprouts
  • 12 cherry tomatoes cut into halves
  • 1 tablespoon olive oil
  • Salt to taste
  • ½ teaspoon black ground pepper
  • 1 teaspoon lime juice
  • 2 tablespoons mixed nuts roasted (optional)
  • 2 tablespoons cilantro minced

Directions

  • Wash Quinoa and boil in water till soft
  • Drain Quinoa keep it aside and let it cool a bit
  • Add Moong sprouts to Quinoa
  • Add olive oil, salt, black pepper powder, lime juice and mix well
  • Arrange in a plate / bowl and top it with cherry tomatoes halves
  • Garnish with roasted nuts
