Quinoa Upma

Ingredients

  • 1 cup Quinoa
  • 1 1/3 cup water
  • 2 cups cut vegetables like carrots, beans and peas
  • 1 cup cut colored peppers
  • ½ cup onion nicely cut
  • 1 tbsp grated ginger
  • 2 green chillies
  • 4 red chillies
  • 1 tsp asafoetida
  • 10 curry leaves
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp Urad dal
  • 1 tbsp chana dal
  • 1/2 tsp turmeric
  • ¾ tsp salt
  • 1 1/3 cup water

Directions

  • In the instant pot, first on saute mode, add the oil and when it is heated add the mustard seeds and allow them to crackle.
  • Next add the ginger, green chillies, red chillies, chana dal, urad dal, curry leaves and asafoetida and stir for a few minutes and then add the onions.
  • After the onions become translucent in 3 -4 minutes add the vegetables.
  • ½ tsp turmeric can be added at this time along with the salt.
  • Last add the water and give it a stir and close the lid and now change to pressure mode and cook for 4 mins and after 4 mins is done turn the knob to vent and release the pressure.
  • Release the pressure and open the lid and fluff up the quinoa with a fork and serve.
