Raw Mango Coconut Salad
Ingredients
- 1 medium Raw Mango
- ¼ cup firmly packed grated coconut
- ¼ cup grated carrots
- ½ jalapeno finely diced
- 2 green scallions finely cut
- ⅓ cup roasted peanuts or cashews (store bought)
- ¼ cup edamame
- 2 tbsp fresh cut cilantro
- 8-10 cherry tomatoes halved
- Salt & pepper for taste
Soy Dressing
- 1 tbsp Soy sauce
- 1 tbsp lime juice
- 1 tbsp Agave
- ½ tbsp Sriracha
Directions
- Peel the skin of the Mango and cut the two halves on either side of the big seed andgrate using the big grater.
- Finely grate the cleaned and peeled carrot.
- Add all the vegetables and top with the roasted nuts and grated coconut.
- Mix all the ingredients of the salad together and drizzle the soy dressing, mix and enjoy.
