Raw Mango Coconut Salad

Ingredients

  • 1 medium Raw Mango
  • ¼ cup firmly packed grated coconut
  • ¼ cup grated carrots
  • ½ jalapeno finely diced
  • 2 green scallions finely cut
  • ⅓ cup roasted peanuts or cashews (store bought)
  • ¼ cup edamame
  • 2 tbsp fresh cut cilantro
  • 8-10 cherry tomatoes halved
  • Salt & pepper for taste

Soy Dressing

  • 1 tbsp Soy sauce
  • 1 tbsp lime juice
  • 1 tbsp Agave
  • ½ tbsp Sriracha

Directions

  • Peel the skin of the Mango and cut the two halves on either side of the big seed andgrate using the big grater.
  • Finely grate the cleaned and peeled carrot.
  • Add all the vegetables and top with the roasted nuts and grated coconut.
  • Mix all the ingredients of the salad together and drizzle the soy dressing, mix and enjoy.
