Raw Papaya Salad
Ingredients
- 2 cups raw papaya (half papaya)
- 1 cup grated carrot
- ½ red pepper
- ½ slab baked tofu
- 2 thai red chillies
- ½ cup roasted peanuts
- 2 tbsp fresh coriander
Dressing
- ⅓ cup rice vinegar
- 1 tbsp soy sauce
- 2 tbsp agave
- 1 tsp grated ginger
- 1 tsp grated garlic
- 1 finely sliced red chili
Directions
- Wash and peel the skin of the papaya (remove the seeds) and grate it thick.
- Julienne cut the red pepper into a match stick shape.
- Deseed the red chillies to reduce the spice and cut it finely.
- Mix the carrots, red pepper, papaya, and add diced baked tofu.
- Mix all the ingredients for the dressing and drizzle generously on the salad.
