Raw Papaya Salad

Ingredients

  • 2 cups raw papaya (half papaya) 
  • 1 cup grated carrot 
  • ½ red pepper 
  • ½ slab baked tofu 
  • 2 thai red chillies 
  • ½ cup roasted peanuts 
  • 2 tbsp fresh coriander 

Dressing 

  • ⅓ cup rice vinegar 
  • 1 tbsp soy sauce 
  • 2 tbsp agave 
  • 1 tsp grated ginger 
  • 1 tsp grated garlic 
  • 1 finely sliced red chili  

Directions

  • Wash and peel the skin of the papaya (remove the seeds) and grate it thick. 
  • Julienne cut the red pepper into a match stick shape. 
  • Deseed the red chillies to reduce the spice and cut it finely. 
  • Mix the carrots, red pepper, papaya, and add diced baked tofu. 
  • Mix all the ingredients for the dressing and drizzle generously on the salad.
