Rice Pilaf

Ingredients

  • 2 tablespoon oil (I use Avocado oil)
  • 1 cup basmati rice
  • 2 teaspoon cumin seeds
  • 2 cups water
  • ½ teaspoon turmeric
  • 1 badi eliche
  • 1 inch cinnamon stick
  • 1 star anise
  • 1 large bay leaf
  • 1 cup peas
  • 1 cup cauliflower, cut into small pieces
  • 1 cup carrots, grated
  • 2 green chilies, slit in the middle
  • 1 teaspoon ginger, minced
  • Salt to taste

Directions

  • In a sauce pan heat oil. Add cumin, cloves, badi eliche, bay leaf, turmeric, green chilies and cinnamon.
  • Keep stirring until the fragrance is released.
  • Add all the vegetables and ginger.  Sauté until aromatic.
  • Add rice and water let it boil.
  • Transfer it to the Insta pot or rice cooker. If not, keep it in the same pot and cover a tight lid.  It takes approximately 15 minutes for the rice to be cooked.
  • After the rice cools for 10 minutes, fluff the rice with a fork.
